Most technology starts with people defecating in the field. Usually there is a good reason for this: they do not correspond to established technologies. Sometimes new technology overcomes obstacles and finds a niche; sometimes it never makes it to the corner and just disappears. I’ve seen cookbooks for years showing how to get ceramic knives out of a short heel, but the market keeps growing. Are the knives good enough, or are people just fascinated by the latest things at a low price?

Today we have set ourselves the task of answering various questions. Are ceramic knives good? Do you want to add ceramic knives to your collection or even push them to the top of the pile? Do they really break into a million little sharp pieces, as they say? We bought a huge pile of knives and went to this test kitchen to answer these questions. Read on to find out what we’ve learned.

What are ceramic knives?

Ceramics is an ancient form of technology in which clay materials such as clay and sand are formed into useful shapes and then heated to harden them into useful and beautiful things. Throughout human history, ceramics have been used to preserve and cook food. However, high-quality ceramics are relatively new. Modern materials science has created new types of ceramic materials based on extremely pure raw materials and strictly controlled production technologies. Depending on the raw materials and processes used, engineers can produce high-quality ceramics with all kinds of mechanical, electrical, thermal and optical properties.

Ceramic knives are made from zirconium dioxide, also called zirconium. The carefully ground raw materials are reduced to powder with a particle size of about one micrometer in diameter. The powder is placed in the shape of a knife, then hardened under massive pressure and boiled at a high temperature. The resulting blank in the shape of a knife is cut on a diamond wheel and fitted with a handle. The end product is lighter, stronger and harder than any other steel.

Advantages of ceramic knives

The most important characteristic of ceramic knives is their hardness. Each time the knife cuts, the blade is bent and pressed under the microscope. Over time, the repeated tension of the cut dullens the cutting edge, resulting in a blunt knife. The ceramic knife is much harder than the steel knife and absorbs only a small part of the deformation during cutting. Ceramic knives stay sharp much longer than steel knives. Our tests have simulated the wear of many blades, both ceramic and steel. In the end, the steel knives were almost destroyed, while the best ceramic products remained virtually unchanged. Even second-rate ceramics were still usable. Under the right conditions, if the blade is not deliberately damaged, we expect the ceramic knife to maintain a good edge for years.

Ceramic knives are very light compared to steel knives. The 6 to 8 inch ceramic knives of the cook and the Santocus ceramic knives weigh about 80 to 100 grams, while my steel knives of the same size and shape weigh about 200 grams. Even lighter punched steel knives, such as the Amazon Basics and Cusinart, weigh about 130 grams. These lighter knives are easier to handle than normal-sized steel knives, especially for people with small hands.

In our tests we compared the performance of Kyocera’s ceramic cook’s knife with that of a Victorinox Santoku steel knife. Ceramic knives have an anti-stick advantage over steel knives.

In my opinion, the other advantages are rather small. Ceramic knives are resistant to rust and acids, but I get the same result with stainless steel knives by keeping them clean and dry. Higher hardness means that ceramic knives transfer the taste and smell of one food to another at a slower pace. I think that the transmission of taste of steel knives is already quite low and depends more on careful cleaning of the knife and cutting board, but other people may feel differently.

Ceramic knife Deficiencies

There are compromises in everything, and ceramic knives are no exception. The extreme hardness of the ceramics is achieved by the strength of the ceramics. If too much force is applied, the knife breaks, which can have catastrophic consequences. All manufacturers claim that their ceramic knives should not be used to cut bone or frozen products. They must also not be used to force, twist or interfere with the affairs of others. I’ve heard terrible stories about ceramic knives falling into surprisingly everyday kitchen situations, but we’ve had no problem testing them. We even tried to break a few knives by hitting them on the concrete floor first, but the damage was minimal. However, ceramic knives have a more limited capacity range than steel knives.

Another compromise is the extra hardness of ceramic knives. Although they stay sharp much longer than steel knives, they need special equipment or a specialist to sharpen them. It’s quite easy to repair a steel knife (we can repair a destroyed Victorinox in five minutes), but your ceramic knives require much more effort.

Ceramic knives are very light compared to steel knives. This is not a copy-paste error, but a minus and a plus. The weight of the kitchen knife is important. It does part of the work for you and helps you guide the magazine so you don’t have to work with your hand as much. To a certain extent you will always adapt your movements to the knife, but the inability of the ceramic knife to cut bones into flesh means that you will have to use both a ceramic and a steel knife, so you will not really be able to settle in the style of one of the knives.

Line

A look at the world of ceramic knives showed us two large product groups. Finally, we have cheap sets of knives that can be used by the AirBNB or can be rented in the summer. If you had to cook with them every day, you’d soon wish you had a better knife, but the price is so good that you don’t care if someone breaks it or loses it. We compare them with similar steel kits from Amazon Basics and Cuisinart.

We have seen such steel knives in many places, and they tend to cut and get bored very quickly. The purpose of this test is to determine whether a cheap ceramic assembly can perform better.

At the highest level we have knives that claim to be your number one knife. They are usually sold separately and cost as much as a cheap set. We compare them with the Victorinox Santoku at the top and some cash registers of the special daily knife line at the bottom. Here we want to see if these knives can find a place in your kitchen and if they are used regularly.

After measuring the size and weight of each knife, we started carrots to feel how they work. We cut coins and cut carrots into cubes, thin and thick. This test consisted of trying out different movements and handles to see how practical it is to use knives for the most important daily task.

The big winter squash is the hardest thing I’ve cut in my kitchen, so we took an acorn squash to give this ceramics a real workout. Is the super-sharp edge enough to survive these tough battles? It’s a place where the weight and strength of a steel blade comes in handy, so we wanted to see if this lightweight ceramic could support it.

Suffocation

Just take the sharp knife out of the box and cut well the first day. Even professional cashiers can handle it. The question is how the knife will cut after a certain time. We covered what the experts say not to do, if you want to save the knives, so to simulate months of use, we did exactly that. In particular, we scratched 50 times with ceramic tiles with knives and knives. I can say with absolute certainty that you shouldn’t do this if you like your knives.

Pineapple

We knifed some knives to challenge some pineapples. Pineapple is treacherous when cut, with a mixture of soft and hard, plus a series of revealing curves. We cut the pineapple in quarters and cut strips of hard outer skin off each knife to see how they do with such a complex hairstyle.

Tomato

The tomato is the perfect test for any knife. The chef’s sharp knife glides directly into the tomato without crushing it, while the blunt knife can barely start cutting. We tried to cut slices of tomato in each knife, then we gave it another turn until it got boring on the tiles, then we tried another slice.

Drop test

We’ve heard terrible stories about ceramic knives breaking when damaged. So we tried to drop a few points of shoulder height on a concrete floor. In any case, the knife wasn’t excessively damaged – the tip broke off, but I can’t blame him.

Kyocera Advanced is the 7-inch knife of a chef who wants to be your main kitchen knife. Our tests have shown that this is a very good argument for cooperation. At $61, it’s also the most expensive thing in this test, so the bar is pretty high.

Kiocera went through the roots like butter. It’s incredibly hot. The balance is perfect and the grip is comfortable. Unlike some of our small knives, the blade is large enough to leave space under the handle for the joints to release the cutting board. There is also a small unfinished area directly at the heel of the knife so that the fingers are not cut off. My only complaint is that the curvature of the blade is too soft to get a good swing when sharpening. Kiocer didn’t have a jerk problem. It took some work, but with good control it became quite easy. He slipped into the pineapple without any problems after the boring session. The tomato is cut neatly and easily into slices, even after it is boring again.

In general, the Kyocera is probably the best ceramic knife in the world. He had no problem with all our harassment, so he was able to work in a normal kitchen environment for many years. Is this your number one kitchen knife? I’m too used to the weight and feel of my steel knife, but it could be someone’s first choice.

For $13 you can’t buy anything incredible in the knife department, but Sandyist is as good as you can be. This is a 6 inch Super-Basic Chef’s knife with blade and storage container. The pen looks cheap, but he’s not trying to do anything strange. I like the grip and balance of this knife, except for one thing – the edge of the blade reaches the heel, including the sharp angle. Hold on to the next finger or you’ll be cut off.

Sendaist did pretty average work with the carrots. The sharpness of the blade is acceptable, but that’s not surprising. The control is quite good, with a rather aggressive curve that gives a clear rocking movement. I didn’t really like the pumpkin cut, but he came through with some difficulty. The knife did an excellent job on the pineapple. I especially liked the way I was able to keep control with a light grip. It took a few steps to get a slice of tomato, but in the end it was cut into neat slices. After the attack I was impressed by the fact that it was cut in exactly the same way as before.

In general, the Sandyist is a fairly common knife, but an absolute robbery for $13. I put it in the camping box: it’s sharp, durable, versatile and cheap enough that I won’t worry if it crashes.

Are ceramic knives their own business, or is it just another version of the classic cook’s knife? The emperor of the kitchen is a knife in our district struggling to be a traditional 8 inch cook’s knife. The tread is extremely traditional with an excellent shape for easy swinging, the grip is traditional and confident with convenient rubber grip tips. The leaf has a short edge at the base to give the next finger a safe place to rest. The weight (140 g) is the heaviest in our test, comparable to that of a forged steel knife, but still a third less than that of a relatively large forged knife. For 20 bucks, including the blade cover and the storage container, I’d like this knife.

The emperor of the kitchen ruled over carrots with a sharp edge and a simple cutting method. This big performance was a bit disappointing when we tried it on pumpkin acorns. He bit the skin well, but he struggled a bit with hard vegetable meat. The extra length helped me because I could help with the hand that was cut off at the end. The pineapple is well cut, but without much mud. I really appreciate that I can handle this cut. It all fell apart in the tomato test. The emperor of the kitchen needed help with the point to start cutting the first piece, but after the second round of blunting, he couldn’t make a piece of it at all.

All in all, I give the emperor of kitchens a good grade. The shape, weight and grip are excellent. The leaf also started well, but after it was bone, it hit hard. Of course you’ll treat this knife better than we will, but I don’t think you’ll be able to sharpen it in a year’s time. But for $20 it’s pretty good and it’s an excellent starting knife if you want to try ceramics.

T-Fal Ingenio offers a unique feature among our ceramic knives: a stamp. Unlike a real forged knife, it is only a plastic ring that penetrates into the blade itself. This really helps to balance this 6 inch cook’s knife, but I have the feeling that the rest of the handle is missing a point. Where the normal handle remains almost exactly in the latch, the T-shaped notches stick out sharply. The result is a bad grip, either a grip at the end to make notches, or a bruise that splits my third finger far enough to go into the notch. Anyway, I’d be a lot happier without this fake roller coaster.

T-Faul did a good job creating carrots. It is pleasantly sharp and although the handle is uncomfortable, the leaf has a good shape for easy swinging. He did a convincing but not surprising job in squash. It was easy to bite the outside, but the squash wasn’t easy to pass. T-fal distinguishes itself in the pineapple by a smooth and confident cut of a complex fetus. But she fell on the tomatoes. It started badly and only got worse after the knife was blunt. A crushed tomato would just have been crushed; our normal tomato would have been happy to just be crushed.

For $18, including the blanket, T-Faul is a fairly standard knife. The attack is unpleasant and cannot withstand prolonged wear and tear. There are better knives for the same price.

We tried a 5 inch Farberware Santoku ($19) plus a 3 inch knife ($7) that is sometimes sold with it. Each of them comes with a plastic travel case.

My first impression wasn’t very good. The blade is small and the handle is huge. The balance is good, but I can’t find a comfortable grip anywhere and I have medium to large hands. The middle part of the grip is too big for my fingers, no matter which grip I try. Worse than that: Because the knife is completely on the cutting board, there is only ⅜ between the thickest part of the handle and the cutting board, so there is no room for fingers. I don’t know how they expect you to use that thing. The hilt of the disassembly knife is also too big, but I find it less annoying.

As for the carrots, it was a real disappointment after trying some of the best knives. It wasn’t bad, but there was no recognizable clarity in our winners. The catch was as uncomfortable as I feared, and I never found a good way to use it. The short blade had real squash problems, but the cut was pretty good, even though it couldn’t cut through the whole squash at once. The pineapple showed a knife in the middle of the package. I could check him relatively well around the corner, but he wasn’t that sharp. The first slices of tomato were pretty good, but in the second round, the dulling of the tiles brought it out of the hard crack. After I was blunt, I couldn’t get the cut without starting with the tip of the knife to make a purchase.

In general, Farberware has average performance and poor design. For $19 you could have done a lot worse, but this knife isn’t very pleasant to use.

The lowest point of any set of knives is usually a utility knife. Stuck between a chef’s knife and a cutting knife, it is usually a garnish that is only grabbed when the best knives are dirty. A set of Shenzhen ($30) is a brilliant move and replaces it with a really useful Santoca. That’s three knives worth using. I think I’m gonna faint.

The handles of these knives are really good, with a cone in the blade for a very good grip. With these knives I feel as strong as with the other knives in the test. If only, instead of a sharp heel, there was a bit of false sharpness on the blade, they would start with a perfect result. When I started with the carrots, I was even more impressed. The leaf is beautiful and sharp, and its curvature gives way to a gentle rocking motion. The blade went straight into the stomach squash, but it was difficult to finish the cut just because there weren’t enough knives to work with. The blunting of the first time did not have much effect, and the cut on the pineapple was clean and controlled. Shenzhen had problems with tomatoes, and they needed a little help from the start. The second set of stumps made the situation even worse, but I managed to get a piece of it (barely).

All in all, it’s a very good set of knives. They have a good design that makes them really suitable for almost anything. They won’t last forever, but what?

With the Takiup set you get for your 26 dollars a supplement that no other set tries to do with a serrated knife. Everything else is perfectly normal, even the unsuccessful selection – all knives have roughly the same profile. I can’t imagine using the knives in the middle of this kit.

The pens on these knives are beautiful. They are ready to take a more adventurous turn than the other brands in the province, and the result works. I can have a good grip, a pen or pliers, and there is plenty of room under the ankle grip for my fingers. A small clip is removed from the heel to also protect your fingers.

The good grip of the carrots turned out to be precious. The shape of the leaves is good and allows a good swing. The leaf seems to be a bit small despite its size. I think it’s because the curve is a bit steep, so there’s a little knife with smiley faces at the beginning of the incision. Takiup failed the pumpkin acorn test, but he barely passed the test. The pineapple was complicated too, but I had the feeling that everything was under control. Takiup has done an excellent job in the tomato test by making clean slices before and after the tomato becomes dull.

I did a special test with a unique serrated knife and the results were not very good. Even the Irish bread, which is relatively soft and carbonated, needed a lot of work to establish itself. Worse, the bread knife must be long, and it’s not even close. A small curiosity in this game is that the lids are very tight. With something that increases safety, I don’t feel safe to put it on or take it off.

In general, this is a fairly average percentage. They are nice enough to use and well maintained, but I don’t like their design, and there are some parts that are less usable.

Wolf War Knives is definitely the best knife game that sounds like an arcade game from the early 90s. Compared to the large population they are quite average. This is another sentence that suffers from the fact that all knives of the same profile are available in different sizes. Even the pins are almost the same size from top to bottom. The price, $24, is also pretty average.

The handle of the kitchen knife is quite simple and provides a good grip. A small clip has been removed from the heel to protect your lead finger, which is a good thing. The recording’s weird. The centre of gravity is well placed, but the ends are heavy compared to the middle, so a small change in the handle really changes the way the knife is handled.

The war of wolves began with the carrots. The leaf is quite sharp, and although the delicate balance was a factor, the control was sufficient. The curvature of the leaf is too aggressive, but I still have a good shot. The squash was too hard for this knife, but after the fight I finally got over it. He didn’t want to go through the pineapple and went to a lot of trouble to finish the cut, but I felt I had the process under control. Cut the tomato well enough with a small saw before and after punching the knife.

They’re not bad knives, but they’re not very recommendable. The wolf war is in the middle of the pack.

4. Imori – ★

The Imori kit looks great in a well-designed $35 storage case, but it’s not very cost effective. The balance of the kitchen knife was disturbed by a heavy handle. I like the shape of the handle, and although it provides a good grip, the balance forces me to pick up the handle of the blade. No matter how I catch it, I don’t like control.

When I started with the carrots, I wasn’t impressed. The blade has medium sharpness and the uncomfortable handle prevents me from moving. However, the shape of the leaves is good and allows a pleasant swinging movement. The reduction of the acorn squash was almost a disaster. It took everything to prevent the knife from slipping and cutting me. I did it, but this knife is totally inappropriate for the job. The pineapple was a big step forward. Imori slipped on it with ease and control. It also produces an excellent slice of tomato before stumping, then a sufficient slice after placing it on the tile.

Finally, the Imori cook’s knife is of medium quality, but it is not pleasant to work with. I like the way the edges stay together over time, but the pen is a real problem.

The advantage of a set of knives is that there are many knives that perform different tasks in different ways. I’m not sure anyone in Coivin heard that. It’s four times the same knife of different size. Can someone explain why you need a 3 and 4 inch knife with exactly the same profile? I’m already in the red with this $26 suit. Pens are good, with handy handles. The knives have a problematic heel, which I have seen on other knives, where there is a sharp point at the base of the knife, where the finger is located.

Coiwin was doing great with the carrots as soon as I found out how she wanted the carrots cut. The cook’s knife has a strange shape – the whole bend is in the last centimetre or so. It’s hard to get a good swing, so it cuts a bit more like a short sock. A pumpkin with acorns was a terrible offer. I had to see him to get through. It wasn’t pretty, and it wasn’t particularly dangerous. The problems continued at the pineapple, where I had to see a lot to get through. The clutch was good, so I could keep control. The tomato was even worse. I couldn’t get a good cut until I blunted the knife, and after a round of tiling it was just a mess.

Overall, the Coiwin series is not very good. The landscape is badly designed, badly built and will not last long. It’s best it’s clean.

The booth? Hey, not all products allow you to spread bad taste around the world. This holder holds the knives in a vertical compartment, so you can choose the perfect knife for every job. Like a fat, bearded nerd, I’m personally insulted by that. The Klingon bat, lovingly mounted on the wall, makes a better impression.

If you leave the support aside (and you have to), the four knives in this set of $26 have the same profile, with enough curve for an acceptable swing. The grip is good, but the balance is heavy, so there is no good way to hold the home port. The blades are ground to the heel so that a sharp point is ready to pierce the lead finger.

The sharpness of the carrots is sufficient, but the complex grip on average leaves a feeling. Homesport can crush acorns with a little work, but suffers from the fact that it’s not long enough to give me a second hand on the tip for better leverage. The first attack on the tile really took a lot out of this knife. I really had to look through the pineapple to get through, and I never felt like I had the incision under control. I couldn’t get a good slice of tomato either, and the second boring session didn’t change for the better or for the worse.

These knives are not very good individually, but the whole thing gets extra points for bad decisions (you’ll probably never intentionally use two utility knives), poor balance and ugly support.

7. Cancer – ★

The best I can say about Raqu knives (27 dollars) is that they understand that different knives have different shapes for a reason. Too many decorations look like a chef’s knife during an irradiation massage. In Cancer there is this time a santoca and a cutting knife in the right shape. The pens are also good, with a simple shape that works, with a good balance.

And now, the worst. Just like you’re used to an 8-inch chef’s knife, a 5-inch santook looks like a joke. Although the shape is excellent, the size is simply insufficient. The edge of the leaf is fairly medium sized, and its small size allows it to work on carrots with lots of movement. The pumpkin was a small accident that looked more like a cup than a gourd. It was all I could do to get pineapple cancer. I had very little control and never took a good bite. The tomato test also failed. It all started when he could barely make the incision, and after punching he could only laminate the tomato.

The Raqu knife isn’t very good. I can’t recommend them.

The void? That’s not cool. For $20, you can buy almost all the defects of any knife in this raid, and more. All knives have the same profile and it’s not very good. The pins are large and the knives are small, there is nowhere for the pins. Under the thickest part of the handle there is a quarter-inch play. The pen is fine, the slit problem is gone. A small notch is made in the heel, but the underside of the notch is still sharp. Why were they worried?

The nuclear tests revealed all previously identified adhesion problems, as well as a new problem specific to Wacool: The knife wants to move slightly to the right at each cut. Vacul used the worst knife of all against the pumpkin in the stomach. We had to open the top to finish the incision. Also the pineapple was not easy to saw and required a lot of sawing and extra work to solve the saw blade problem. When the tomatoes were first sawn, it took a lot of sawing to cut them, but after they were boring, the cut required the use of a skewer.

Vakul has no redeeming properties.

Ceramic Knives [50 Tested, Reviewed & Ranked] for 2020

The big question was first: Are ceramic knives useful? After a long day of cutting, I’d say it’s a reasonable alternative to steel knives. The Kyocera Advanced is a very good knife, but not being able to use it on meat bones or crushed garlic makes me shy. It’s good on vegetables, but is it worth $61 for a timer? I’m inclined to say no. I’m also used to the weight and length of an 8 inch forged steel knife, and I don’t want to go back and forth. But that’s my problem. This is an excellent knife and you might like it, especially if you are a vegetarian or don’t like heavy knives.

It is a real place where the sparkle of ceramics is at the bottom of the market. Sandyist is an incredible choice for $13. You won’t compare it to a steel knife that’s twice as expensive, and it will last much longer. I’m also a big fan of the Shenzhen landscape. It comes with three good knives that you can use for $30. They’re good and sharp, and they will be for a long time to come. They blow relatively expensive steel structures out of the water. I stick to my good steel knives for daily use, but I never look at cheap steel knives again.

Smoked Acorn Gourd Recipe

I fully admit it’s not a wise recipe. But if you already have a smoker, this is a great way to enjoy an acorn squash that will surprise people.

Cut 4 acorns of the pumpkin in half and sprinkle with seeds and strings. Cut them into quarters again and put them in the microwave. Add 2 tablespoons of water and cover with plastic foil. Punch a few holes high in plastic and microwave until the pumpkin is almost soft, for about 8 minutes.

Place the meat on the grill of a smokehouse where it turns into smoke and smoke at about 225° for about 30 minutes. On top of each piece is a teaspoon of butter, ⅛ teaspoon kosher salt and a pinch of smoked paprika.
