Greek Sweet Potato Feta Pie is a delicious vegetarian preparation and absolutely perfect for autumn. The preparation is very simple; sweet potatoes, which are rich in starch and have a sweet taste, are boiled, mashed and then mixed with eggs, breadcrumbs and feta cheese. The sweetness of these tubers, originating from South America, is pleasantly softened by the taste of Greek feta, creating an irresistible combination of flavours. Finally, cooking in the oven results in a soft dish, sticky and golden on the surface, perfect for all situations; you can enjoy it as a second dish or as a single dishwhich allows you to simply serve a vegetable dish, for a quick meal, a special dinner or a standing buffet with many guests. How to make a sweet potato and feta cheese cake
Wash the potatoes well, peel them and cut them into pieces. Then boil them in boiling salted water for about 25 minutes until cooked. Drain them and put them aside.
In the meantime, the onion must be peeled and diced. Fry it in an oil sprinkled pan for a few minutes.
Add the potatoes and leave them to taste for a few minutes.
Mix the potatoes and put them in a bowl. Add the eggs and start mixing.
Add the bread crumbs and three quarters of the feta cheese and stir again. Season to taste with salt and pepper.
Grease a baking tray lightly, sprinkle with a little breadcrumbs and pour in the mixture.
Decorate the top with the rosemary and feta cheese set aside and bake at 180 degrees for about 25 minutes.
When the baking time is over, remove the feta cheese cake with sweet potatoes from the oven and serve warm.
