Strawberry Phirni is a creamy, fruity and light dessert, perfect for special occasions like birthdays, reunions or Valentine’s Day. Summer is fast approaching and the season of fresh strawberries is almost over. I try to make the best use of these beauties in my kitchen. For Valentine’s Day, I made a strawberry pudding with fresh strawberry puree and leftover refrigerator puree. I had to take advantage of it, so I decided to give the classic and traditional Indian firni dessert a boost by adding strawberry puree.
For those who are not yet familiar with this Indian rice pudding and are wondering what a firni is? Firni is a creamy dessert based on whole milk, soaked rice paste, sugar, caradamone and chopped pistachios or almonds, which is served in wafers or earthenware pots. It originated in the Middle East and reached the Indian subcontinent through the Mughals. You can vary the firnibasis by adding rose syrup, mango puree, saffron, chocolate or strawberries. Strawberries and potpourri recipe
I am always looking for easy Indian recipes when fresh strawberries are in the market. We get our dose of vitamin C by eating sliced strawberries with fresh yogurt or oatmeal for a quick breakfast. But I like to incorporate strawberries into desserts because they are naturally sweet and tart, not to mention their juicy and colorful flavor for a dish. I love the pink hue and the creamy taste of strawberry firni, which makes it perfect for Valentine’s Day.
The recipe for firm strawberries is pretty simple and easy to make. Usually, basmati rice is soaked in water for a few minutes before being ground into a smooth paste. This rice paste is gradually added to the boiled milk until it thickens. The firni is sweetened with sugar, flavored with cardamom powder and finally cooked with fresh strawberry puree. But if you don’t have the time or patience to soak the rice, rice flour is a godsend. You can add fresh strawberry puree or use strawberry sauce for a richer fruit flavor.
Once you’ve added this delicious and refreshing dessert to a serving bowl, sprinkle the top with a slice of strawberry and swirl it around for a marbled effect. Add a few chopped pistachios on top for color and crunch. This is definitely a delicious dessert to make if you want to impress your family and friends.
