Wheat Rava Idli
Breakfast is an important meal in our house, and I try to incorporate healthy ingredients into the first meal of the day. The dish should not only be healthy, but also quick and easy to prepare. The wheat rava idli recipe belongs to the category of light and healthy breakfast dishes. Like the Indian rice cakes steamed in South India, they are lighter, but delicious. These shiny, root-covered and visually appealing beauties are child’s play to mate with. In fact, the light color of this instant wheat rave is due to the addition of carrots, not turmeric powder.
Wheat rave or grated wheat is called dala in Hindi and farmers rava in Telugu. Like dhokla, this instant dala idli is a steamed preparation that does not require fermentation. Just mix everything together, let the wheat rava idli pasta rest for a few minutes so the flavors can blend, pour the pasta into greased plates or cups of rava idli, and steam until cooked. The sour curd adds a subtle spicy flavor, while fresh green chilies and ginger spice up the idli. The coriander leaves give a fresh colour and a nice spicy taste. Tempering spices like mustard seed, aromatic curry leaves and asafoetida in ghee gives perfect results. You can add a few toasted cashews at the same time as quenching.

Tips for the preparation of common wheat root
The wheat rava idli recipe requires some preparation as you will be roasting the wheat rava and grating fresh carrots or coconut. But it’s important to burn the rave to create a depth of flavor. You can use coarsely ground sambat wheat and roast it on a low flame until you get a good aroma. Use sour curd. If you don’t have sour curd on hand, use cottage cheese and a little lemon juice. You can add crushed vegetables like carrots, beets or fresh coconut, green peas or any other vegetable of your choice. Eno salt or citric acid is added to the Rava Idli wheat dough just before it is poured into greased moulds. By adding Eno salt, you get soft and fluffy wheat rava idlis.

You can steam the dough in idyllically greased plates. You can steam it in turn in a greased stainless steel container as you would steam a dhokla. After steaming, cut into square pieces and serve. You can serve the chutney with a side dish like tomato or coconut chutney and make wheat rava idli a morning meal. I served the farmers rava idli with coconut hotel style chutney and Tamil Nadu (tomato chutney) takkali style.
